Somewhere between my existential crisis and tree m

Somewhere between my existential crisis and tree meditations, sit unfinished baking projects. I made these coconut date balls and weeks after sitting in the fridge I finally got around to covering them with chocolate. Haven’t been in the mood to create and share, but these were scrumptious and relaxing to make and devour. Blend together, in a food processor, a cup of dates + shredded coconut, a little maple syrup and pinch of salt until sticky. Scoop into balls and cover with melted chocolate chips or cacao powder w/ oil + maple syrup to keep them raw. Finish with course sea salt!

Channeling my love through these gooey, stimulating, sultry, nourishing, indulgent mouthwatering delicious double chocolate raspberry hearts!
Double Chocolate Chip Nut Cookies
1 C almond butter (your fav nut butter)
1/2 C sugar (I used a mix of coconut + brown sugar)
1/3 C maple or agave
2 tbsp flax meal + 6 tbsp warm water
2 tsp instant coffee or espresso
1 1/2 C gf flour (sub w/ paleo or nut flour)
3/4 C cocoa powder
1 tsp baking soda
1/2 tsp salt
1 C mini choc chips
Preheat oven to 350, line baking sheet with parchment. Mix butter, sugar, + flax paste together. Add coffee, flour, cocoa, baking soda, salt, + chips until combined. Eat dough generously...er scoop and shape into hearts. Bake for 8-10 min (doesn’t take long). Fill with fav ice cream. Freeze and finish with sprinkles...if you don’t freeze in between steps they’ll ooze out like mine. All good, just messy.
